How to make spicy chili-lime shrimp

This chili-lime shrimp is flavorful and fast. It’s great on tostadas but also works well in tacos, salads or on its own. Use peeled and deveined shrimp for best results.

  • 1 lb. shrimp, peeled and deveined
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/8 tsp cayenne (optional for heat)
  • 1 Tbsp cilantro, chopped
  • 1 lime, juiced
  1. Mix the spices: Combine chili powder, paprika, salt and cayenne in a small bowl.
  2. Coat the shrimp: Put the shrimp in a resealable bag or bowl. Add the spice blend, cilantro and lime juice, then toss or shake until evenly coated.
  3. Cook the shrimp: Heat a large sauté pan over medium-high. Spray or oil the pan, add the shrimp in a single layer and cook 2 minutes on one side, then 1–2 minutes after flipping, until pink and cooked through. Remove from heat and keep warm.

How to make crispy tostada shells

Making your own tostada shells is easy and gives you extra-crispy results that beat many store-bought versions. If you prefer convenience, store-bought shells will work fine as well.

  • Corn tortillas — medium size works well; adjust baking time for smaller tortillas.
  • Avocado oil spray or a light drizzle of avocado oil
  • Salt — to taste (sea salt or cracked salt recommended)
  1. Preheat: Set the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Oil the tortillas: Arrange tortillas on the sheet, spray or lightly brush both sides with oil, and rub it into the tortillas so they are evenly coated.
  3. Bake: Sprinkle with salt and bake 14–16 minutes or until they start to brown and become crisp. Start checking at 10 minutes as oven times vary.

Tip: Watch the tortillas closely toward the end of baking — once they brown they can go from perfect to too-dark quickly.

  1. Mix: Mash the avocado in a bowl, then stir in onion, cilantro, citrus juice and garlic salt. Adjust seasoning to taste.
  2. Store: Cover and refrigerate until ready to serve to keep flavors bright.

For the shrimp:

Instructions

Make the tostada shells

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Arrange tortillas on the sheet, spray or brush both sides lightly with oil, sprinkle with salt and bake 14–16 minutes until crisp and slightly browned. Check at 10 minutes to avoid over-browning.

Make the guacamole

  1. Mash the avocado in a bowl. Stir in red onion, cilantro, citrus juice and garlic salt. Taste and adjust seasoning. Cover and chill until serving.

Make the shrimp

  1. Combine chili powder, paprika, salt and cayenne in a small bowl. Toss shrimp with the spice mix, cilantro and lime juice until coated.
  2. Heat a large skillet over medium-high heat, add a light spray or drizzle of oil, and cook shrimp 2 minutes per side until opaque and cooked through. Remove from heat.
  3. Assemble tostadas by spreading guacamole on each shell, topping with a few shrimp and any desired garnishes such as chopped tomatoes, shredded lettuce or crumbled cheese.
