The week before Easter, I cleaned and organized the pantry so I could find ingredients quickly on the morning of the meal. Of course, while doing that, I also found the usual mystery of family life: empty boxes left behind on the shelves. When I gathered the ingredients for the casserole, I noticed a jar of real bacon pieces sitting on the pantry shelf. The original casserole was already good, but bacon seemed like the kind of addition that could only make it better. It adds saltiness, texture, and a deeper flavor without adding extra prep time. That small addition turned a simple hash brown casserole into an even more irresistible side dish.

This easy hash brown casserole is a crowd-pleasing American side dish made with frozen shredded hash browns, sour cream, cheddar cheese, cream of chicken soup, and bacon. Ingredients

2 pounds frozen shredded hash browns

1 stick butter, melted

1 – 10.25 ounce can cream of chicken soup

3 cups sour cream

2 tablespoons dried chopped onion, or 1/2 cup fresh chopped onion

2 cups shredded sharp cheddar cheese

1 teaspoon salt

1/2 teaspoon pepper

1 – 3 ounce jar real bacon pieces

Instructions

Preheat the oven to 350 degrees. Prepare a deep 9×13 baking dish with non-stick cooking spray.

In a large mixing bowl, combine the frozen shredded hash browns, melted butter, cream of chicken soup, sour cream, onion, shredded sharp cheddar cheese, salt, pepper, and real bacon pieces. Stir until all of the ingredients are evenly mixed and the potatoes are well coated.

Pour the mixture into the prepared baking dish and spread it evenly from corner to corner. Bake for 45 to 50 minutes, or until the casserole is hot throughout and the top is lightly browned.

Remove from the oven and let it rest for a few minutes before serving. Enjoy it warm as a comforting side dish.
