Ingredients
  • 3 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 1 Tbsp. lemon juice
  • 2 tsp. ground cumin
  • 1 tsp. ground cinnamon
  • 2 tsp. cayenne pepper
  • 2 tsp. black pepper
  • 1/2 tsp. ground ginger
  • 3 tsp. salt
  • SAUCE
  • 1 Tbsp. butter
  • 1 Tbsp. minced garlic
  • 1 jalapeño pepper, finely chopped
  • 2 tsp. ground cumin
  • 2 tsp. paprika
  • 2 tsp. salt, more if needed TT
  • 1 (8 oz.) can tomato sauce
  • 1 cup heavy cream
Instructions
  1. Cut chicken breasts into bite-size pieces and place them in a large resealable bag or container.
  2. In a medium bowl, whisk together yogurt, lemon juice, cumin, cinnamon, cayenne, black pepper, ground ginger, and salt until smooth.
  3. Pour the yogurt mixture over the chicken, seal the bag, and shake or mix until the chicken is evenly coated. Refrigerate and marinate for at least one hour.
  4. When ready, cook the marinated chicken in a large frying pan over medium-high heat, including the remaining marinade, until the chicken is cooked through.
  5. Transfer the cooked chicken to a strainer and allow excess marinade to drain off; do not rinse. Set the chicken aside while you make the sauce.
  6. In a large saucepan, melt the butter over medium heat. Add the finely chopped jalapeño and minced garlic, and sauté for about one minute until fragrant.
  7. Add the cumin, paprika, and salt to the pan, stirring to combine with the garlic and jalapeño.
  8. Pour in the tomato sauce and heavy cream, stirring until the sauce is smooth. Bring it to a gentle simmer, then reduce the heat to low and let it simmer until it thickens, about 20 minutes.
  9. Return the cooked chicken to the sauce and stir until the pieces are fully coated. Simmer a few more minutes if you prefer a thicker sauce.
  10. Serve hot with naan bread and/or steamed rice. Garnish with fresh cilantro if desired.
