Ingredients

  • 3 large eggs
  • 1 tablespoon vanilla-flavored iced coffee creamer (or vanilla creamer)
  • 4 slices Texas toast or other thick-sliced bread
  • 2 tablespoons unsalted butter
  • Powdered sugar, for dusting

Instructions

Heat a skillet over medium heat.

In a medium bowl, beat the eggs together with the vanilla creamer until blended. Dip each slice of bread into the mixture, coating both sides but not letting the bread become overly soggy.

Add a small pat of butter to the warm skillet. Once the butter sizzles and melts, place two soaked slices in the pan. Cook for about 2 minutes on the first side, or until golden brown, then flip and cook the other side until golden and set. Repeat with the remaining butter and bread slices.

Transfer the cooked French toast to plates and sprinkle lightly with powdered sugar. Serve immediately with maple syrup, fresh fruit, or a dollop of yogurt if desired.
