These wicked Poison Apple Cupcakes won’t send anyone to sleep, but they will bring huge smiles to faces this Halloween!

I think these might be my favorite Halloween cupcakes yet. My Poison Apple Cupcakes are dark, decadent chocolate cupcakes filled with gooey caramel, rolled in festive sprinkles, topped with chocolate buttercream, and finished with a tiny “poison apple” made from cake crumbs dipped in red and green candy melts. They look dramatic, taste indulgent, and are a lot of fun to make.
Let’s make some Poison Apple Cupcakes!
What you need for Poison Apple Cupcakes:
- Chocolate cupcakes (recipe below)
- Chocolate icing (recipe below)
- Halloween sprinkles
- Caramel dip
- Red candy melts
- Green candy melts
- Large star piping tip
- Small #2 piping tip
- Piping bags
- Foil or parchment paper
- Brown sprinkles for stems

How to make the mini Poison Apples
These mini apples are made from leftover cupcakes. With the full recipe I baked 24 cupcakes and used roughly 9–12 of them to make the little apples.
Crumble cooled cupcakes into a bowl and stir in about one tablespoon of frosting. Mix until the texture resembles play dough; add a bit more frosting if needed but avoid making the mixture wet.
Form tablespoon-sized balls and shape them slightly like apples. Freeze the shapes for about 20 minutes so they firm up.
When chilled, melt the red candy melts according to package instructions. Dip each cake ball into the melted candy, tapping off the excess, and place them on foil or parchment to harden. They don’t need to be perfectly smooth because you’ll decorate them with green “poison” later.
I usually cover about a dozen apples with 12 ounces of red candy melts.

Adding the poison drip
Next, melt the green candy melts. I prefer to melt half the bag at a time so the chocolate stays workable and doesn’t harden in the piping bag.
Fit a piping bag with a small #2 tip and fill it with the melted green candy. Pipe two small circles and an upside-down teardrop near the top of each apple for the “eyes” and “nose.” Then pipe drips around the apple and fill in the top half to create the poisoned effect.
Press a few brown sprinkles into the top to resemble a stem. Let the apples sit for about 10 minutes until the candy hardens.

Prepare the cupcakes
For the finished cupcakes, use chocolate cupcakes (recipe below). Carefully cut a small plug from the center of each cooled cupcake and spoon in caramel dip. Replace the plug to seal in the filling, then spread a thin layer of frosting over the top.

Pour Halloween sprinkles into a shallow bowl and gently press each frosted cupcake into the sprinkles so the sides and top pick up color and texture.

Fill a piping bag with chocolate buttercream fitted with a large star tip and pipe a swirl in the center of each cupcake. Top each swirl with one mini Poison Apple.

Ingredients
Cupcakes:
- 2 cups sugar
- 1 & 3/4 cups flour
- 3/4 cup cocoa
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla
- 1 cup boiling water
FOR THE FROSTING:
- 1 stick of butter, melted
- 3/4 cup cocoa
- 6 cups powdered sugar (may need more to thicken depending on preference)
- 2/3 cup milk
- 2 teaspoons vanilla
For Poison Apples
- 9 -12 of the baked cupcakes
- 12 ounces red candy melts
- 6 ounces green candy melts
- brown bar type sprinkles
- 1 tablespoon frosting
Also Need:
- Halloween sprinkles
- 3/4 cup caramel dip
- large star piping tip
- small #2 piping tip
- piping bags
- foil or parchment paper
Instructions
Cupcakes:
- Preheat oven to 325°F (163°C).
- In a mixer bowl combine sugar, flour, cocoa, baking powder, baking soda, and salt.
- Add eggs and mix to combine.
- Add milk, oil, and vanilla; mix for 2–3 minutes until smooth.
- Stir in boiling water—the batter will be very thin.
- Line a muffin tin with liners and fill each about two-thirds full (just under 1/4 cup batter each).
- Bake 18 minutes or until a toothpick comes out clean. Cool completely.
Frosting:
- Pour melted butter into a mixer bowl and mix in cocoa.
- Add 3 cups powdered sugar and mix until smooth.
- Add 1/3 cup milk and mix. Add remaining powdered sugar and mix again.
- Add remaining milk and stir in vanilla.
- Adjust thickness with more powdered sugar to thicken or extra milk to thin.
How to make the mini Poison Apples:
- Crumble cooled cupcakes into a bowl and mix in about 1 tablespoon frosting until the texture resembles play dough.
- Roll tablespoon-sized balls and shape like tiny apples. Freeze 20 minutes.
- Melt red candy melts per package instructions. Dip each cake ball, tap off excess, and set on foil to harden.
- Melt green candy melts and fill a piping bag fitted with a small #2 tip. Pipe two small circles and a teardrop for eyes and a nose, then pipe drips and fill in the top half to create the poison effect.
- Press a brown sprinkle into the top for a stem and let harden for about 10 minutes.
Assemble Cupcakes:
- Cut out a small plug from the center of each cupcake and spoon in caramel dip.
- Replace the plug, spread a thin layer of frosting, and roll the cupcake in Halloween sprinkles.
- Pipe a chocolate buttercream swirl with a large star tip and top each cupcake with a mini Poison Apple.
