  • 1 tablespoon chili powder
  • 2 1/2 teaspoons cumin
  • 2 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons kosher salt

Burgers and Veggies:

  • 1 medium sweet onion
  • 1 large poblano pepper
  • 1 medium-large red pepper
  • 1 tablespoon olive oil
  • 1 pound extra-lean ground beef

Guacamole Topping:

  • 1 avocado
  • 1/4 cup of your favorite salsa
  • 1/8 teaspoon kosher salt
  • 1/16 teaspoon black pepper

  • 4 whole grain buns

Instructions

  1. Prepare and preheat your grill.
  2. In a small bowl, combine the chili powder, cumin, garlic powder, onion powder and 1 1/2 teaspoons kosher salt to make the spice mixture.
  3. Peel the onion and trim the ends, then cut it into four even horizontal planks so the rings stay together. Remove the stems and cores from the peppers and cut each into four large pieces. Toss or brush the vegetables with olive oil and sprinkle with 2 tablespoons of the spice mixture, coating both sides.
  4. In a large bowl, crumble the ground beef and sprinkle with the remaining spice mixture. Mix gently to distribute the spices without overworking the meat. Form 4 patties about 1/2–3/4″ thick and 3 1/2–4″ in diameter, making a small divot in the center of each patty to prevent doming while cooking.
  5. Grill burgers and vegetables over medium heat. Cook patties about 8–10 minutes on the first side and 5–8 minutes on the second side, adjusting for your preferred doneness and your grill’s heat. Grill vegetables until crisp-tender; place thicker onion planks on hotter spots and move thin poblanos to slightly cooler areas if needed.
  6. Meanwhile, in a medium bowl combine mashed avocado, salsa, 1/8 teaspoon salt and a pinch of black pepper to make a chunky guacamole.
  7. Remove the burgers and vegetables from the grill and let the patties rest a few minutes. Slice the vegetables into strips: cut each pepper piece into 4–6 strips and halve the onion planks, separating the rings.
  8. Serve each burger on a whole grain bun, pile on the vegetable strips and top with a generous dollop of guacamole. Provide napkins — these are gloriously messy and flavorful.
